Ingredients

  • 1 cup frozen edamame, thawed
  • 1 small avocado
  • 1/2 tsp salt
  • Juice of 1 lemon
  • 2 tbsp nutritional yeast
  • 1 tsp miso
  • Salt and pepper to taste
  • 1 tbsp olive oil
Topping:
  • Pink sauerkraut
  • Black sesame
  • Sourdough toast

Instructions

1. Add all of the ingredients to a food processor or blender and blend to desired consistency. We prefer to leave the texture chunky but you can also make it smooth like hummus.
2. To serve, top with beet sauerkraut and sesame seeds. Enjoy!
