Spicy Sweet Potato & Carrot Soup

Ingredients
- 1 sweet potato
- 3 carrots, diced
- 2 celery sticks, chopped
- 1 thai green chilli, chopped
- 1 tbsp veg stock powder
- 1 tbsp nutritional yeast water
- ½ cup Coconut milk
- Salt and pepper to taste
- Olive oil
- Juice of 1 lime
- seed crackers for topp
Instructions
1. Roast the sweet poato in a 450 degree oven with a drizzle of olive oil for about 45 minutes until potato is tender. Set aside.
2. Add oil to a pot and bring up to a medium heat. Add the carrots, celery, and chili, and cook for about five minutes. Add in the remaining ingredients and cook for about 15 minutes until vegetables are soft. Add the sweet potato to the pot, then using an immersion blender or blender, blend until smooth.
3. To serve, top with crushed seed crackers, a drizzle of oil, and sprinkle of cilantro. Enjoy!
