
Ingredients
- 1 block extra-firm tofu (frozen overnight, then thawed and pressed)
- 2 tbsp cornstarch
- 2–3 tbsp unsweetened almond milk
- 1 tsp salt
- 1 tsp smoked paprika (or regular)
- ¼ cup nutritional yeast
- ¼ cup Panko breadcrumbs (optional)
- Avocado oil spray
Instructions
1. Prep the tofu. After thawing, press the tofu to remove excess water. Tear into nugget-sized chunks for extra texture (instead of cutting into cubes).
2. Make the batter. In a bowl, mix almond milk with the corn starch, salt and paprika. In another bowl, add the nutritional yeast and bread crumbs (if using them).
3. Dip each tofu chunk into the almond milk mixture, then toss into the second bowl of coating. For extra crunch, repeat the dip + coat step once more.
4. Spray the air fryer basket or baking dish with avocado oil. Arrange the tofu pieces in a single layer, spray lightly on top as well. Air fry at 400°F (200°C) for 12–15 minutes, shaking halfway through, until golden and crispy.
5. Enjoy hot with your favorite dipping sauce!
